Ratatouille

   

Hi Fam,

Ingredients:

  • 2-3 Zucchini
  • 2-3 Yellow Squash
  • 1-2 Small Eggplants
  • 3 Red Bell Peppers
  • 4 Medium Sized Tomatoes
  • Handful of Cherry Tomatoes
  • 8-10 Baby Golden Potatoes
  • 2-3 Garlic Cloves
  • Large Can of Diced or Crushed Tomatoes
  • 1 Bushel Thyme
  • 1 Bushel Fresh basil
  • 1 Bushel Oregano
  • Red Pepper Flakes to taste
  • 3 Tablespoons Olive oil

Instructions: 

Step 1. Put canned diced tomatoes into cast iron cooking pan.

Step 2. Add in seasonings and minced garlic. Stir together.

Step 4. Cut all veggies and potatoes in 1/4 thick rounds. Layer in a circular formation around pan. Place extra veggies in the middle. Top with pierced baby tomatoes and drizzle with olive oil.

Step 5. Cook at 375* Degrees for 75 minutes!
